Fruit Cake

This is the first fruit cake that i baked in my life. Tak pernah buat sebab
dengar banyak spekulasi yang mengatakan buahnya mendaplah, manis sangatlah, nanti tak jadi sebab buahnya sedikitlah dan macam2. At the end i decided to give it a try, why not? No harm of trying, tak sedap sendiri makan lah! But i pandai2 add this and that because i suka sangat mencuba pada resepi2 ni.  I add some cocoa powder and add some almond slivered, bila dah siap i sprinkled it with some orange juice, wrap with aluminium foil and keep in airtight container. Put in a fridge, kalau nak makan, just keluarkan awal, potong. Voila!!!!! Sedap juga my fruit cake ni. Thanks to 'Tai Ka Cher' Linda Khor kerana sudi kongsi resepi.

ingredient
A
250gm butter
250 gm brown sugar
B
1 tbsp golden syrup}
                                            or 11/2 tbsp black treacle
1/4 tbsp chocolate emulco}
C
4 cold eggs             }
                                mix together
25ml cold water      }
D
225 gm plain flour}
1/2 tsp baking powder} mix together and sift
1/2 tsp mixed spices}
E
750 gm mixed fruits}
                                  mix together
50 gm plain flour}

Method

Beat group A till creamy. Add in group B. Slowly add in group C and then fold in group D. Lastly fold in froup E. Pour batter into a 6 inch by 10 inch cake tin that has been double lined with paper and buttered.

Bake in oven temperature 180c for 1 hour then at 160c for 2 hours or more. (After 1 hour cover the cake top with foil to prevent from getting burnt). Take out and keep for a day. Sprinkle with rum or brandy.( i omit this but i sprinkled with orange juice) Cut to pieces and wrap.
