Carrot Cake

I really love carrot cake but don't know how to make it till my senior in school gave me this recipe through her blog. I trusted her and tried the recipe
....it turned out to be 'super delicious'. Thanks Mak Yan, for sharing the recipe! Thumbs up to her...hehehehe. I know that there are some that just a plain carrot cake without any nuts added but i prefer the one with nuts and i can go 'nuts' eating it...kih! kih! kih! Last week we went to one of the hotel in KL, the 5 star luxury hotel and i was eyeing their carrot cake, we bought it and tried it but it's not like what i expected. So plain and....no commentlah!!! Maybe it's true when people said each people have different opinion about food especially when it comes to personal satisfaction. Well, enough said and after we got home, the next day i baked my favourite carrot cake. Voila.......!!!!

5 eggs
350 gm castor sugar
230 gm wholemeal flour
120 gm all purpose flour
1/2 tsp cinnamon powder (optional)
1 tsp baking powder
250 ml vegetable oil
440 gm grated carrot
1/2 cup toasted walnut

Frosting
125 gm cream cheese
125 gm butter
100 gm icing sugar
 1 cup toasted walnut

For those who love the cream cheese, you can double the recipe.


Method
Beat the egg till frothy and bubblish. Add in sugar and beat till fluffy, double the amount. Mix all the dry ingredient and pour into the egg mixture.Pour in vegetable oil slowly and continue beating. Lastly add in carrot and walnut and stirred it. Bake in 180-190C for 50 minutes.
To make the frosting, mix all the ingredient and beat till soft and fluffy.
