Pizza
Baru balik kerja hari ni, my daughter dah mintak buatkan Pepperoni Pizza
....alahai...Mummy baru sampai rumah! She loves pizza so much so i have no choice but to make her favourite pepperoni pizza. I saw in Yahoo news the other day about how easy it is to make pizza, so i decided to follow Chef Fabrizio tips ( if i'm not mistaken) to make the pizza. According to him, pizza doesn't have to be round! Wah!!!! ini orang Itali sendiri cakap pizza tak semestinya berbentuk bulat! Quite interesting juga cara dia buat pizza, so i followed his method. Memang simple dan mudah.

basic dough
150 ml water
1 level tsp sugar
14 gm fresh yeast or 2 level tsp dried yeast
224 gm plain flour
11/2 level tsp salt
Measure the tepid water about 27C into a bowl. Add sugar. Squeeze the fresh yeast in the liquid with your finger and swirl the liquid till sugar and yeast dissolved. If using dried yeast, sprinkle it into the liquid and allow to stand for 10-15 minutes in a warm place till froth develops. Sift the flour into a large mixing bowl. Pour in the yeast liquid. Lightly oil the or flour your hands. Work the flour and liquid together till it becomes coherrent mass. Sprinkle your work surface generously with flour. Tip the dough on to the work surface and scrape out any which is sticking to the bowl. Begin kneading. Leave it to prove for an hour. Punch down the inflated dough to release the air and roll out the dough. preheat oven to 230C.

Saturday Tea Time: Walnut Banana Bread

Ingredients:
- 1 cup flour
- 1/2 cup sugar
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 3/4 cup oatmeal (quick cooking type)- i omit this
- 1 egg, beaten
- 3 Tbsp melted butter
- 1/2 cup milk
- 2 overripe bananas, mashed
- 1/3 cup chopped walnuts (optional)
Procedure:
1. Mix all dry ingredients in a big bowl.
2. In another bowl, whisk egg, butter and milk.
3. Make a well in the center of the dry ingredients and pour the liquids in #2. Mix well.
4. Add the mashed bananas and nuts and mix to combine.
5. Transfer batter into ban and cook for 30-40 minutes.
Note: I cook it for 35 minutes
6. Take out from oven when a toothpick comes out clean when inserted.
7. Transfer to a wire rack, let it cool, slice and enjoy.

Sweet Bread
Yeayyyy.....it's Saturday again....leganya! Well, after 5 days of work Saturday is the day where i can do things
i like, baking, cleaning the house dan macam2. Penat juga tapi siapa lagi nak buat...kan? Pagi ni...rasa2 macam nak makan nasi lemak tapi hubby kata nak makan yang a bit light, so terus bukak buku resepi. Cari punya cari terjumpa satu resepi ni, namanya Sweet Bread, kita boleh letak cheese sebagai intinya atau red bean, tapi hubby prefer cheese. Apa lagi kelam kabut buat 'water roux' untuk bagi roti lembut dan gebu. Bila dah sejuk, terus menguli tepung. Inilah hasilnya......( recipe from kak Rima: Thanks! You're my inspiration)

500g high protein flour - bread flour
100g sugar
11g instant yeast
150g water roux
1 egg
1 egg yolk
100ml fresh milk
70g butter
1 tsp salt
Filling
400g cheddar cheese
100g butter
50g caster sugar
Method
Mix flour, sugar, water roux, eggs and yeast
Add in fresh milk a little at a time and continue to knead
Add butter and salt, knead again until pure elastic
Leave the dough for an hr or so or till it double in size
Divide dough into several balls .. each ball weighs around 70g
Flatten each dough and add in fillings and roll it into balls again
Let ur dough stand for 10mins or till it doubles in size
Brush dough with egg wash and bake it in a preheated oven of 175C for 15mins
For filling
Stir butter and sugar with whisk.. add in grated cheddar cheese.
If you like red bean can use the red bean paste instead of cheese

Valentines Day......baking bread????
Tak ada pun buat apa2 coz busy but hubby belanja makan kat Khadijah's Kitchen in Section 17...not bad, sedap! After that we rushed back home sebab dah lewat, kids have to sleep early if not mummy the next morning kena pasang loudspeaker, kalau tak .....seorang pun tak bangun. Anyway I've prepared for them some bread that i've learned how to bake it from my dearest Sifu hehehehe...Cik Norhuda Mohd Nor! A big clap for her coz since i know how to make my own bread, susah dah nak beli bread from the shop. Better bake your own coz there's no preservative and no colouring. Yang penting it's clean! After I've learned from her the basic bread, i can easily follow any recipe on how to make any bread such as sweet bread, potato bread, pizza etc. Oh ye..that Khadijah's Kitchen owned by our songbird Khaty Ibrahim......

Perginya seorang insan tersayang....
Tanggal 1 Feb 2012 ialah hari yang paling sedih untuk kami sekeluarga kerana pada hari itu bapa mertua yang di sayangi telah pergi untuk selama2nya. Seorang bapa mertua yang amat penyayang serta memahami, kini telah ke rahmatullah. Semoga rohnya dicucuri rahmat dan aman di sana. Al Fatihah.........
