Petit Pain.....Simple Bread

Bila bukak bekas roti, tengok dah habis, hati mula tak sedap. What will my daughter
eat tomorrow for breakfast? Fikir punya fikir, i decided to make this simple bread, further more i'm in a hurry. Nak masak fish curry and also nak buat roti lagi. Penat juga ni tapi to make this bread is so easy like A B C and for those yang baru nak belajar cara buat roti, this is the simplest that you can make. Mesti jadik! Thanks to Pook for the recipe.

ingredient

230g ................................. Bread flour
140g ................................. Cake flour
1 ........................................ Egg
2tbsp ................................ Honey
30g ................................... Unsalted butter
150-170ml ...................... Water (warm about 45 °C )
1 1/3tsp ........................... Instant yeast
1/3tsp .............................. Salt

Mix together honey and water.
Put the flour, and yeast in a bowl, whisk to combine, add and salt whisk again. Pour the egg and honey mixture , together with the egg into the bowl.
Use large spoon (or pastry scraper) to mix everything together, and knead briefly to bring all the ingredients together (add more water if the dough's too dry).
Take the dough out of the bowl and knead, you will see the dough will be elastic after about 2 minutes.

Add the butter and knead by using the heel of your hands to compress and push the dough away from you, then fold it back over itself. Give the dough a little turn and repeat. Put the weight of your body into the motion and get into a rhythm. Keep folding over and compressing the dough. Knead for 10-15 minutes or until the dough is soft, pliable, smooth and slightly shiny, almost satiny.
See how to knead bread, here.
Put the dough into a light buttered bowl. Let the dough rise in a warm place until double in size (can be 1 hour or 1 hour and a half check often depend on the temperature).

Preheat the oven to 180°C.
Line 2 baking sheets with baking paper.
Take the dough out of the bowl, deflate by touch it lightly.
Cut the dough into 14 pieces roll into a ball and let them rest for 10 minutes.

Press the center of the dough and with a wood stick to make a mark , do the same for the rest of the dough.
Let the dough rise until almost double in size, about 1 hour.
Sprinkle with flour before baking.
If you want the mark to be clear use a back of a knife press it lightly again.
Bake for 15 minutes or until golden brown.

Cinnamon Pull Apart Bread

Breakfast pagi ni di sediakan awal pagi sebab lepas subuh tadi i can't sleep so i decided to bake this bread. Taste a bit like
Cinnabon kat US tu, dulu ada di jual kat KLCC and Bangsar tapi sekarang tak tau kenapa dah tak ada. Tapi this bread tak lah semanis Cinnabon tu. Panjang betul namanya bila nak sebut so kita panggil CPAB je lah! I love this bread bila makan while it's still warm tak boleh nak berhenti. ( thanks akak Rima, i terus cari dari Joy the Baker, terus buat dan menjadik) hehehehe.....

Minum petang pun boleh juga buat bread ni, layan lah dengan secawan English tea or a cup of coffee.....hmmmm!!!

For the Dough:

3 cups all-purpose flour

1/4 cup granulated sugar

2 1/4 teaspoons (1 envelope) active dry yeast

1/2 teaspoon salt

2 ounces unsalted butter

1/3 cup whole milk

1/4 cup water

2 large eggs, at room temperature

1 teaspoon pure vanilla extract

For the Filling:

1 cup granulated sugar

2 teaspoons ground cinnamon

1/2 teaspoon fresh ground nutmeg

2 ounces unsalted butter, melted until browned

**This is the original recipe I tested and use. Some bakers have found that the dough doesn’t rise, because the yeast is not first activated in warm water. As a fail-safe, feel free to activate your yeast first. To activate yeast, whisk yeast into 3 tablespoons of warm water. The water should be between 105 and 115 degrees F. Add a pinch of granulated sugar and allow the mixture to sit for about 5 minutes, until the mixture is foamy and frothy. Your yeast is ready to go! If the mixture does not foam and froth, toss the yeast and try again with another package of yeast. Add the activated yeast when you combine the wet and dry ingredients.

In a large mixing bowl (I used just the bowl of my stand mixer) whisk together 2 cups flour, sugar, yeast, and salt. Set aside.

Whisk together eggs and set aside.

In a small saucepan, melt together milk and butter until butter has just melted. Remove from the heat and add water and vanilla extract. Let mixture stand for a minute or two, or until the mixture registers 115 to 125 degrees F.

Pour the milk mixture into the dry ingredients and mix with a spatula. Add the eggs and stir the mixture until the eggs are incorporated into the batter. The eggs will feel soupy and it’ll seem like the dough and the eggs are never going to come together. Keep stirring. Add the remaining 3/4 cup of flour and stir with the spatula for about 2 minutes. The mixture will be sticky. That’s just right.

Place the dough is a large, greased bowl. Cover with plastic wrap and a clean kitchen towel. Place in a warm space and allow to rest until doubled in size, about 1 hour. *The dough can be risen until doubled in size, then refrigerated overnight for use in the morning. If you’re using this method, just let the dough rest on the counter for 30 minutes before following the roll-out directions below.

While the dough rises, whisk together the sugar, cinnamon and nutmeg for the filling. Set aside. Melt 2 ounces of butter until browned. Set aside. Grease and flour a 9x5x3-inch loaf pan. Set that aside too.

Deflate the risen dough and knead about 2 tablespoons of flour into the dough. Cover with a clean kitchen towel and let rest for 5 minutes. On a lightly floured work surface, use a rolling pin to roll the dough out. The dough should be 12-inches tall and about 20-inches long. If you can’t get the dough to 20-inches long… that’s okay. Just roll it as large as the dough will go. Use a pastry brush to spread melted butter across all of the dough. Sprinkle with all of the sugar and cinnamon mixture. It might seem like a lot of sugar. Seriously? Just go for it.

Slice the dough vertically, into six equal-sized strips. Stack the strips on top of one another and slice the stack into six equal slices once again. You’ll have six stacks of six squares. Layer the dough squares in the loaf pan like a flip-book. Place a kitchen towel over the loaf pan and allow in a warm place for 30 to 45 minutes or until almost doubled in size.

Place a rack in the center of the oven and preheat to 350 degrees F. Place loaf in the oven and bake for 30 to 35 minutes, until the top is very golden brown. The top may be lightly browned, but the center may still be raw. A nice, dark, golden brown will ensure that the center is cooked as well.

Remove from the oven and allow to rest for 20 to 30 minutes. Run a butter knife around the edges of the pan to loosen the bread and invert onto a clean board. Place a cake stand or cake plate on top of the upside down loaf, and carefully invert so it’s right side up. Serve warm with coffee or tea.

Pizza

Baru balik kerja hari ni, my daughter dah mintak buatkan Pepperoni Pizza
....alahai...Mummy baru sampai rumah! She loves pizza so much so i have no choice but to make her favourite pepperoni pizza. I saw in Yahoo news the other day about how easy it is to make pizza, so i decided to follow Chef Fabrizio tips ( if i'm not mistaken) to make the pizza. According to him, pizza doesn't have to be round! Wah!!!! ini orang Itali sendiri cakap pizza tak semestinya berbentuk bulat! Quite interesting juga cara dia buat pizza, so i followed his method. Memang simple dan mudah.

basic dough

150 ml water
1 level tsp sugar
14 gm fresh yeast or 2 level tsp dried yeast
224 gm plain flour
11/2  level tsp salt

Measure the tepid water about 27C into a bowl. Add sugar. Squeeze the fresh yeast in the liquid with your finger and swirl the liquid till sugar and yeast dissolved. If using dried yeast, sprinkle it into the liquid and allow to stand for 10-15 minutes in a warm place till froth develops. Sift the flour into a large mixing bowl. Pour in the yeast liquid. Lightly oil the or flour your hands. Work the flour and liquid together till it becomes coherrent mass. Sprinkle your work surface generously with flour. Tip the dough on to the work surface and scrape out any which is sticking to the bowl. Begin kneading. Leave it to prove for an hour. Punch down the inflated dough to release the air and roll out the dough. preheat oven to 230C.

Pagi ni...rasa2 macam nak makan nasi lemak tapi hubby kata nak makan yang a bit light, so terus bukak buku resepi. Inilah hasilnya......( recipe from kak Rima: Thanks! You're my inspiration)

Valentines Day......baking bread????

Tak ada pun buat apa2 coz busy but hubby belanja makan kat Khadijah's Kitchen in Section 17...not bad, sedap! After that we rushed back home sebab dah lewat, kids have to sleep early if not mummy the next morning kena pasang loudspeaker, kalau tak .....seorang pun tak bangun. Anyway I've prepared for them some bread that i've learned how to bake it from my dearest Sifu hehehehe...Cik Norhuda Mohd Nor! A big clap for her coz since i  know how to make my own bread, susah dah nak beli bread from the shop. Better bake your own coz there's no preservative and no colouring. Yang penting it's clean! After I've learned from her the basic bread, i can easily follow any recipe on how to make any bread such as sweet bread, potato bread, pizza etc. Oh ye..that Khadijah's Kitchen owned by our songbird Khaty Ibrahim......

Anyone who want to know the recipe can find her in my FB page under Nurulhuda Mohd Nor.
